  • 1/2 cup grated Parmesan cheese

  • 1 cup romaine lettuce, chopped
  • 1/2 cup Caesar dressing Consider homemade yogurt-based dressing for a lighter option.

Preparation

  • Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and pepper.
  • In a shallow bowl, combine the breadcrumbs and grated Parmesan cheese. Dip each chicken breast into the mixture, coating well.

Cooking

  • Heat olive oil in a large skillet over medium heat. Cook the chicken breasts for 5-6 minutes on each side, until golden brown and cooked through.
  • Transfer the skillet to the oven and bake for an additional 10 minutes for extra crispiness.

Assembly

  • Toast the slices of bread until golden.
  • Layer the toasted bread with chopped romaine, a generous drizzle of Caesar dressing, and the crispy chicken.
  • Add extra Parmesan cheese and croutons if desired.
  • Close the sandwich, press gently, slice in half and serve with your favorite side.

Notes

Store leftover chicken separately from lettuce and dressing in airtight containers. Chicken lasts 3-4 days, while lettuce and dressing are best consumed within 2 days. Reheat chicken in the oven at 350°F (175°C).
