  • 1 cup panko breadcrumbs Panko provides better crunch than regular breadcrumbs
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup mayonnaise
  • 1-2 tablespoons sriracha Adjust according to your spice preference
  • 1 tablespoon honey or agave syrup For sweetness
  • Fresh green onions for garnish Optional

Preparation

  • Start by cutting the salmon fillet into bite-sized pieces, roughly 1-inch cubes, and place them in a large bowl.
  • Sprinkle the salmon pieces with salt, pepper, paprika, and garlic powder, tossing to ensure each piece is coated evenly.
  • In a separate bowl, add panko breadcrumbs. Dip each seasoned salmon piece into the breadcrumbs, ensuring they are fully coated.

Cooking

  • For baking, preheat your oven to 400°F (200°C). Place the coated salmon pieces on a baking sheet lined with parchment paper and bake for about 12-15 minutes or until golden brown.
  • For frying, heat oil in a skillet and fry the bites for about 3-4 minutes on each side until crispy and cooked through.

Sauce Preparation

  • In a small bowl, mix mayonnaise, sriracha, and honey. Adjust the spice level according to your preference.

Serving

  • Drizzle the spicy mayo over the cooked salmon bites and garnish with chopped green onions. Serve warm!

Notes

If you have leftovers, store in an airtight container in the fridge. They will stay fresh for up to 2 days. To reheat, place them in the oven at 350°F (175°C) for about 10 minutes.
