Set Up Breading Station

In a second bowl, beat the egg.
In a third bowl, mix breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
Bread the Zucchini
Dip each zucchini slice into the flour, shaking off excess.
Next, coat it in the beaten egg.
Finally, press it into the breadcrumb mixture, ensuring both sides are well coated.
Place the breaded zucchini slices onto the prepared baking sheet in a single layer without overlapping.
Bake
Lightly spray the tops of the zucchini with cooking spray to help them crisp.
Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
