Crispy Baked Zucchini Chips

These Crispy Baked Zucchini Chips are a healthy and delicious alternative to traditional fried chips. They’re lightly breaded, perfectly seasoned, and baked to crispy perfection.

Ingredients
  

  • 2 medium zucchini thinly sliced into 1/8-inch rounds
  • 1/2 cup breadcrumbs panko works well for extra crispiness
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika optional
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 cup all-purpose flour
  • 1 large egg beaten
  • Cooking spray or olive oil spray

Instructions
 

  • Prep the Zucchini
  • Preheat your oven to 425°F (220°C).
  • Line a large baking sheet with parchment paper or a silicone baking mat. Spray lightly with cooking spray.
  • Slice the zucchini into thin rounds using a knife or mandoline for uniform thickness.
  • Set Up Breading Station
  • In one shallow bowl, place the flour.
  • In a second bowl, beat the egg.
  • In a third bowl, mix breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  • Bread the Zucchini
  • Dip each zucchini slice into the flour, shaking off excess.
  • Next, coat it in the beaten egg.
  • Finally, press it into the breadcrumb mixture, ensuring both sides are well coated.
  • Place the breaded zucchini slices onto the prepared baking sheet in a single layer without overlapping.
  • Bake
  • Lightly spray the tops of the zucchini with cooking spray to help them crisp.
  • Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  • Serve
