Onion Rings Ingredients

  • 2 large large white or yellow onions Use sweeter varieties for a milder taste if desired.
  • 1 cup Panko breadcrumbs Works best for an extra crunch.
  • 1 cup all-purpose flour For coating the onions.
  • 2 large large eggs
  • 1 cup mozzarella cheese, shredded Sprinkle generously for that 'oozing' effect.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • to taste Salt
  • to taste Pepper
  • as needed Cooking spray or olive oil For drizzling.

Preparation

  • Preheat your oven to 425°F (220°C) and prepare a baking sheet lined with parchment paper or a silicone mat.
  • Peel the onions and slice them into 1/4-inch circles. Carefully separate the rings.
  • Set up your breading station with three separate bowls: one for flour mixed with garlic powder, onion powder, paprika, salt, and pepper; one for whisked eggs; and one for breadcrumbs.

Breading and Baking

  • Coat each onion ring in the flour mixture, then dip in the egg, and coat in breadcrumbs. Place them on the baking sheet.
  • After all rings are breaded, sprinkle shredded mozzarella on each ring.
  • Spray with cooking spray or drizzle with olive oil, then bake for about 20-25 minutes until crispy and golden brown.

Notes

Store leftovers in an airtight container in the refrigerator for 2-3 days or freeze for up to three months. Reheat in the oven at 350°F for about 10 minutes.
