For the Potatoes

  • 1.5 pounds baby potatoes (or small red potatoes)
  • 4 tablespoons olive oil
  • 3 tablespoons grated Parmesan cheese
  • 4 cloves garlic, minced
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Preparation

  • Start by placing the baby potatoes in a large pot. Fill it with water, ensuring the potatoes are fully submerged. Add a generous pinch of salt and bring to a boil. Cook until the potatoes are fork-tender, about 15-20 minutes.
  • While the potatoes are boiling, preheat your oven to 425°F (220°C). Have your baking sheet ready.
  • Once soft, drain the potatoes and transfer them to the prepared baking sheet. Use a potato masher or the bottom of a glass to gently smash each potato until it’s about ½ inch thick.
  • In a small bowl, mix together olive oil, minced garlic, salt, and pepper. Brush this mixture over each smashed potato generously, then sprinkle grated Parmesan cheese on top.

Baking

  • Pop the baking sheet into the oven and bake for 20-25 minutes, or until the potato edges are golden and crispy.

Serving

  • Once crispy, remove the potatoes from the oven and let them cool slightly. Garnish with fresh parsley before serving!

Notes

For optimal crispiness, space the smashed potatoes apart on the baking sheet. Don't skip the olive oil for a golden crust. Consider adding herbs like rosemary or thyme for extra flavor.
