  • 1 cup breadcrumbs Use your favorite coated breadcrumbs.
  • 1/2 cup grated Parmesan cheese Can be substituted with nutritional yeast for a dairy-free option.
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste salt and pepper Be generous with seasoning.
  • 2 pieces eggs
  • 1/4 cup flour
  • as needed cooking spray or oil For extra crispiness.

Preparation

  • Preheat your oven to 400°F (200°C) to ensure even baking.
  • Pat the chicken dry with paper towels to remove excess moisture.
  • In one bowl, place the flour. In a second bowl, whisk together the eggs. In a large bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.

Coating and Baking

  • Dredge each chicken piece into the flour, shaking off any excess.
  • Dip it into the egg, allowing any extra to drip off.
  • Coat it with the breadcrumb mixture, pressing lightly to adhere.
  • Place the coated chicken pieces on a baking sheet lined with parchment paper. Lightly spray them with cooking oil.
  • Bake in the preheated oven for 30-35 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and is golden brown.
  • Allow it to rest for a few minutes before serving.

Notes

For substitutions, use gluten-free breadcrumbs or crushed cornflakes. Store leftovers in an airtight container in the fridge for up to 3-4 days or freeze for 2-3 months. Reheat in the oven at 375°F (190°C) for 15-20 minutes.
