Main Ingredients

  • 2 medium zucchinis Fresh and firm for best results.
  • 1 cup breadcrumbs Panko breadcrumbs can be used for extra crunch.
  • 2 large eggs Beaten for breading.
  • 1/2 cup grated Parmesan cheese Optional for added flavor.
  • 1 teaspoon garlic powder For seasoning.
  • 1 teaspoon onion powder For seasoning.
  • Salt and pepper To taste.
  • Cooking spray or olive oil For greasing the air fryer.

Preparation

  • Wash the zucchinis thoroughly and slice them into 1/4-inch thick rounds.
  • In one bowl, beat the eggs. In another bowl, mix the breadcrumbs, garlic powder, onion powder, Parmesan cheese, salt, and pepper.

Breading and Cooking

  • Dip each zucchini slice into the egg wash, letting excess drip off, then coat it with the breadcrumb mixture.
  • Preheat the air fryer to 400°F (200°C) for about 5 minutes.
  • Lightly spray the air fryer basket with cooking spray, arrange the coated zucchini slices in a single layer, and cook for about 10-12 minutes, flipping halfway through.

Serving

  • Once cooked, remove, and let them cool for a couple of minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer or oven to keep crispy.
