Main Ingredients

  • 1 medium eggplant (about 1 pound) Look for firm eggplants with shiny skin.
  • 1 cup breadcrumbs Use regular or gluten-free breadcrumbs.
  • ½ cup all-purpose flour Can substitute with a gluten-free flour.
  • 2 large eggs Whisked for coating.
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon smoked paprika Or your favorite seasoning.
  • Salt and pepper to taste
  • Cooking spray or a few teaspoons of olive oil For air frying.

Preparation

  • Slice the eggplant into ½ inch thick rounds. Optionally, sprinkle salt over the slices and let sit for 30 minutes to draw out moisture. Rinse and pat dry.
  • Set up your breading station with three bowls: one with flour (seasoned with salt and pepper), one with whisked eggs, and one with breadcrumbs mixed with garlic powder, onion powder, smoked paprika, and additional salt and pepper.

Breading and Cooking

  • Dip each eggplant slice into flour, shaking off excess, then into the eggs, and finally into the breadcrumb mixture.
  • Preheat air fryer to 375°F (190°C).
  • Place coated eggplant slices in the air fryer basket without overlapping. Lightly spray or brush with olive oil.
  • Air fry for about 12-15 minutes, flipping halfway through, until golden brown and crispy.
  • Serve hot with your favorite sauce or enjoy plain.

Notes

For best results, choose firm eggplants and season breadcrumbs with various spices for added flavor. Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat in air fryer or oven to restore crispiness.
