Preheat the Oven
Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
Prepare the Crescent Rolls
Unroll the crescent dough and separate it into triangles. Place one apple wedge at the wide end of each triangle, then roll it up tightly, enclosing the apple.
Arrange in the Baking Dish
Place the rolled apple dumplings in the prepared baking dish, leaving a little space between each.
Make the Sauce
In a mixing bowl, combine melted butter, granulated sugar, brown sugar, cinnamon, and vanilla extract. Whisk until smooth, then pour the mixture evenly over the dumplings.
Add Soda
Pour the lemon-lime soda around the edges of the dish (not over the dumplings). This will create a bubbly, caramel-like sauce as it bakes.
Bake
Bake for 35-40 minutes, or until the dumplings are golden brown and the sauce is bubbling.
Serve
Serve warm with a scoop of vanilla ice cream or a drizzle of caramel sauce for the ultimate treat.
