  • 4 medium yellow squash, sliced Look for firm, vibrant yellow squash for best flavor.
  • 1 small onion, diced For sautéing.
  • 1 cup sour cream Gives the casserole its creamy texture.
  • 1 cup shredded cheddar cheese You can substitute with mozzarella or Parmesan.
  • 1 cup crushed Ritz crackers For the crunchy topping.
  • 2 tablespoons butter, melted Mix with Ritz crackers for topping.
  • Salt and pepper to taste

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet, sauté the diced onion over medium heat until translucent. Add the sliced yellow squash and cook until slightly tender, about 5 to 7 minutes.
  • In a mixing bowl, combine the sour cream, shredded cheddar cheese, salt, and pepper. Stir well to combine.
  • Remove the squash from heat and add it to the cheese mixture. Stir until the squash is evenly coated.
  • Pour the mixture into a greased 9x13-inch baking dish, spreading it evenly.
  • In a separate bowl, mix crushed Ritz crackers with melted butter, then sprinkle over the top of the casserole evenly.
  • Bake for about 25 to 30 minutes, or until the topping is golden brown and the casserole is bubbly.

Notes

This casserole can be prepared ahead of time and stored in the refrigerator. Reheat in the microwave or covered in the oven at 350°F for 15-20 minutes. You can freeze it before baking for up to 2 months.
