Ingredients

For the Crispy Garlic Crumbs

  • 1 cup breadcrumbs For crispy topping.
  • 1 tablespoon olive oil For frying the breadcrumbs.
  • 1 clove garlic, minced To flavor the crumbs.

Instructions
 

Preparation

  • In a medium saucepan, bring the vegetable broth to a gentle simmer. Keep it warm over low heat.
  • In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  • Stir in the minced garlic and cook for another minute, being careful not to let it brown.
  • Add Arborio rice to the skillet and stir to coat the grains with the oil. Cook for about 2 minutes, allowing the rice to toast slightly.
  • Pour in the crushed tomatoes, oregano, salt, and pepper. Mix well until the rice is coated.

Cooking

  • Using a ladle, add 1 cup of warm vegetable broth to the rice mixture, stirring gently. Cook until most of the liquid has been absorbed.
  • Add another cup of broth and repeat this process until the rice is creamy and al dente, about 18-20 minutes total.
  • Once the rice is cooked to your liking, stir in the grated Parmesan cheese. Adjust seasoning as necessary.

Making the Crumbs

  • While the risotto cooks, heat 1 tablespoon of olive oil over medium heat in a separate skillet.
  • Add breadcrumbs and cook, stirring often until golden and crispy. Add minced garlic for an additional minute of cooking.

Serving

  • Spoon the creamy risotto onto plates or bowls, top with crispy garlic crumbs, and garnish with fresh basil.

Notes
