Ingredients
  

For the truffles

  • 1 cup cream cheese, softened Ensure it's softened for easy mixing.
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup graham cracker crumbs
  • 1 tbsp cinnamon Adds flavor to the truffles.
  • 1/4 cup chocolate chips Add a delightful surprise.

For the coating

  • 1 cup white chocolate, melted Use for dipping the truffles.

Preparation

  • In a large mixing bowl, add the softened cream cheese, powdered sugar, and vanilla extract. Beat them together until smooth and creamy using a hand mixer or a whisk.
  • In a separate bowl, mix the graham cracker crumbs with the cinnamon.
  • Gradually add the graham cracker mixture into the cream cheese blend and mix until well-combined. Fold in the chocolate chips.

Shaping

  • With clean hands, scoop out tablespoon-sized portions of the mixture. Roll them into balls and place them on a lined baking sheet.

Chilling and Dipping

  • Refrigerate the truffle balls for about 30 minutes.
  • Once firm, dip each truffle in the melted white chocolate, ensuring they’re fully coated. Place them back on the lined baking sheet.
  • While the chocolate is still soft, sprinkle some extra graham cracker crumbs or cinnamon on top.

Setting

  • Allow the truffles to set in the fridge for at least 1 hour until completely hardened.

Notes

For a dairy-free option, consider using vegan cream cheese. For optimal flavor, chill longer before serving. Ensure cream cheese is softened for easy blending.
