Ingredients
  

Pasta and Salmon

  • 8 oz pasta (fettuccine or penne)
  • 1 lb salmon fillet (skin removed)

Sauce Ingredients

  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • 2 cloves garlic, minced

Cooking the Pasta

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

Preparing the Salmon

  • While the pasta cooks, season the salmon fillet with salt and pepper. In a large skillet over medium heat, add a drizzle of olive oil. Once hot, place the salmon in the skillet.
  • Cook for about 4-5 minutes on each side or until the salmon is cooked through and flakes easily with a fork.

Making the Sauce

  • Remove the salmon from the skillet and set aside. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
  • Pour in the heavy cream, stirring to combine. Allow the cream to simmer for 2-3 minutes until slightly thickened.

Adding Spinach and Cheese

  • Add the fresh spinach to the skillet and stir until wilted.
  • Then, mix in the grated Parmesan cheese, stirring until it melts and creates a creamy sauce. Season with additional salt and pepper if needed.

Combining Pasta and Salmon

  • Flake the cooked salmon into large chunks and add it, along with the drained pasta, to the skillet. Toss gently to combine everything, ensuring the pasta is well-coated in the creamy sauce.

Serving

  • Garnish with additional Parmesan and a sprinkle of black pepper. Serve immediately and enjoy!

Notes

You can swap out the pasta for whole wheat or gluten-free varieties. For a lighter version, substitute half of the heavy cream with low-fat milk or a plant-based milk alternative. Ensure everything is prepped and ready before starting to cook.
