Cuisine American
- 8 ounces pasta your choice
- 1 pound ground beef
- 1 can (10 ounces) Rotel diced tomatoes with green chilies
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- salt and pepper to taste
- chopped green onions optional, for garnish
Cook the pasta by boiling a large pot of salted water, adding the pasta and cooking according to package instructions until al dente, then drain and set aside.
In a large skillet over medium heat, brown the ground beef, breaking it apart as it cooks until it's no longer pink, about 5 to 7 minutes, and drain excess fat if necessary.
Stir in the can of Rotel tomatoes with green chilies to the beef and allow it to simmer for about 2-3 minutes to let the flavors blend.
Lower the heat and mix in the sour cream and half of the cheddar cheese, stirring until everything is well combined and the cheese is melted.
Fold in the cooked pasta, mixing until everything is evenly coated in the creamy sauce.
Top with the remaining cheddar cheese and optional chopped green onions, then serve hot.
