  • 1 cup Strong brewed coffee Brewed and cooled
  • 1 cup Pistachio paste Can be made by blending roasted pistachios
  • 8 ounces Mascarpone cheese Fresh for best flavor
  • 1 cup Heavy cream
  • 1/2 cup Powdered sugar
  • 1 teaspoon Vanilla extract
  • to taste Chopped pistachios For garnish

Preparation

  • Brew a strong cup of coffee and let it cool completely.
  • In a large mixing bowl, combine the mascarpone cheese, heavy cream, pistachio paste, powdered sugar, and vanilla extract. Use a hand mixer to whisk until smooth and creamy.
  • Quickly dip each ladyfinger into the cooled coffee, allowing them to soak without becoming soggy.
  • In a rectangular dish, arrange a layer of coffee-dipped ladyfingers. Spread half of the pistachio cream mixture over the ladyfingers, smoothing it out with a spatula. Repeat this process with another layer of soaked ladyfingers followed by the remaining cream mixture.
  • Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
  • Before serving, garnish with chopped pistachios to add a delightful crunch.

Notes

Use fresh ingredients for the best flavor. Experiment with flavors by adding almond or chocolate for variety. Allow ladyfingers enough time to soak for maximum flavor without making them soggy. Chill overnight for optimal texture.
