  • 1 lb Italian sausage Make sure it’s a lean option.
  • 1 cup chopped onion
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup uncooked pasta Use your favorite type.
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, for garnish

  • In a large pot over medium heat, add the Italian sausage. Cook until browned, breaking it up with a spoon as it cooks. Remove the sausage and set aside, draining any excess fat.
  • In the same pot, add the chopped onion, carrots, and celery. Sauté for about 5 minutes until softened. Add the minced garlic and sauté for an additional minute.
  • Pour in the chicken broth and bring the mixture to a boil. Once boiling, add the uncooked pasta and cook according to package instructions until al dente.
  • Reduce the heat and stir in the heavy cream and Parmesan cheese until fully combined and melted.
  • Add the browned sausage back to the pot and mix well. Season with salt and pepper to taste.
  • Ladle the soup into bowls and garnish with fresh parsley. Enjoy your comforting bowl of creamy goodness!

Notes

Ingredient Variations: Feel free to swap out the pasta type or even add vegetables like spinach or kale for an extra nutritional boost. Timing Matters: Be sure not to overcook the pasta in the broth. You want it perfectly al dente to maintain a nice bite in the soup. Storage Tip: If you have leftovers, store them in an airtight container in the refrigerator. Just be wary—pasta can soak up a lot of the broth, so you may want to add a splash of broth when reheating!
