  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish (optional)

Preparation

  • In a large pot, heat a tablespoon of oil over medium heat.
  • Add the Halal Italian sausage and cook it until browned, breaking it into smaller pieces (about 5-7 minutes).
  • Toss in the chopped onion and minced garlic. Cook until the onion becomes translucent (about 3-4 minutes).
  • Pour in the chicken or vegetable broth, and add the Italian seasoning. Bring it to a gentle simmer, stirring occasionally.
  • Lower the heat and stir in the heavy cream slowly to avoid curdling. Allow to simmer for another 5 minutes.
  • Gradually add the grated Parmesan cheese while mixing to ensure it melts properly. Taste and season with salt and pepper as needed.
  • Ladle the soup into bowls and garnish with fresh parsley or basil before serving.

Notes

For a lighter version, you can substitute ground chicken or turkey sausage, ensuring it's Halal-friendly. Be cautious when simmering with heavy cream to avoid curdling by keeping the heat low. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for about 1 month. Reheat gently on the stove with a splash more cream for richness.
