  • 1 pound ground beef
  • 4 large potatoes, peeled and diced
  • 1 onion chopped
  • 4 cups beef broth
  • 1 cup heavy cream
  • 2 cloves garlic, minced

  • Chopped parsley, for garnish

Cooking the Soup

  • In a large pot over medium heat, add the ground beef. Cook until browned, stirring occasionally. Drain any excess fat if necessary.
  • Add the chopped onion and minced garlic to the pot with the beef. Sauté for 3-4 minutes until the onion is translucent and fragrant.
  • Stir in the diced potatoes and beef broth. Bring the mixture to a boil, then reduce to a simmer. Cover and cook for about 15 minutes or until the potatoes are tender.
  • Once the potatoes are cooked, stir in the heavy cream. Season with salt and pepper to taste. Let it cook for an additional 5 minutes to blend all the flavors together.
  • Remove the pot from the heat. Ladle the soup into bowls and garnish with chopped parsley for a fresh finish. Enjoy it hot!

Notes

For a healthier twist, substitute ground beef with lean turkey or lentils for a plant-based option. Ensure potatoes are diced evenly for thorough cooking. Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months. Reheat on the stovetop, adding beef broth or cream if necessary.
