Ingredients
  

For the Meatballs

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1 piece egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning

For the Creamy Sauce

  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 teaspoon red pepper flakes (optional)

Preparation

  • In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, chopped parsley, minced garlic, Italian seasoning, salt, and pepper. Add in the egg and mix until everything is well combined.
  • Gently form the mixture into meatballs, roughly the size of a golf ball.

Cooking

  • In a large skillet over medium heat, add a splash of olive oil. Once hot, add the meatballs and cook for about 2-3 minutes on each side or until they are nicely browned.
  • Remove the meatballs from the skillet and set them aside. In the same skillet, add the chicken broth, scraping up any browned bits from the bottom. Stir in the heavy cream and red pepper flakes if desired.
  • Return the meatballs to the skillet and allow them to simmer in the creamy sauce for about 10-15 minutes, until they are fully cooked and the sauce has thickened.
  • Garnish with additional parsley if desired, and serve warm over rice or pasta.

Notes

For a lower-carb option, use almond flour instead of breadcrumbs. Ensure not to overmix the meatball ingredients to keep them tender.
