  • 0.5 cup sugar
  • 0.25 cup lemon juice About 2 lemons
  • 1 tablespoon lemon zest
  • 0.25 teaspoon salt
  • 1 cup whipped cream Store-bought or homemade

For the Crust

Preparation

  • In a bowl, whisk or beat the whipped cream until it forms soft peaks. Set aside.
  • In a separate mixing bowl, combine the plain yogurt, sugar, lemon juice, lemon zest, and salt. Stir until well combined and the sugar has dissolved (about 1-2 minutes).
  • Gently fold the whipped cream into the yogurt mixture, being careful not to deflate the whipped cream.

Assembly

  • Pour the creamy filling into the pre-made pie crust, smoothing the top with a spatula.
  • Cover the pie and place it in the refrigerator for at least 2-4 hours, or until set.

Serving

  • Once set, slice your Creamy Lemon Yogurt Pie and garnish with additional lemon zest or fresh berries if desired.

Notes

For a unique twist, fresh lime juice can be used instead of lemon juice. Make this pie the night before your event for best results.
