Preparation

  • In a medium saucepan over low to medium heat, warm the heavy cream until it is just steaming, but do not let it come to a boil.
  • Once the cream is heated, remove it from the heat and add the chopped white chocolate and butter. Stir until everything is melted and combines into a silky mixture.
  • Mix in the freshly squeezed lemon juice and lemon zest to infuse a refreshing flavor into the truffle mixture, stirring until well combined.
  • Pour the mixture into a bowl and cover it with plastic wrap. Refrigerate for about 2 hours or until it becomes firm enough to scoop.

Shaping and Coating

  • Use a small scoop or your hands to form the chilled mixture into bite-sized balls. Roll each ball between your palms for a perfectly smooth finish.
  • For an extra touch, roll your truffles in powdered sugar, crushed nuts, or coconut flakes.

Chilling and Serving

  • Place the coated truffles on a parchment-lined baking sheet and refrigerate again for about 30 minutes to firm up before serving.

Notes

Store leftover truffles in an airtight container in the refrigerator for up to one week. For longer storage, freeze them for up to three months. Let them sit at room temperature for about 10-15 minutes before serving to regain perfect texture.
