  • 2 cups cooked chicken, shredded or diced
  • 4 cups broccoli florets
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth (low-sodium recommended)
  • 1 cup heavy cream Can be substituted with half-and-half or coconut cream for a dairy-free option
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: A pinch of red pepper flakes for heat

Preparation

  • In a large pot, heat the olive oil over medium heat.
  • Add the chopped onion and cook until softened, about 3-4 minutes.
  • Stir in the minced garlic and sauté for another minute until fragrant.
  • Pour in the chicken broth and bring to a simmer.
  • Add the broccoli florets to the pot and let them cook for about 5-7 minutes until they are tender but still vibrant green.
  • Stir in the cooked chicken and heavy cream, bringing the soup back to a gentle simmer.
  • Add salt and pepper to your liking. For a little kick, sprinkle in a pinch of red pepper flakes.
  • Once all ingredients are combined and heated through, ladle into bowls and enjoy!

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat on the stovetop over medium heat. If too thick, stir in a bit of chicken broth to reach desired consistency.
