  • 1 medium spaghetti squash The base of the dish, providing a pasta-like texture.
  • 1 tablespoon olive oil For roasting the squash and sautéing the vegetables.
  • 2 cups fresh spinach Adds color and nutrients.
  • 2 cups mushrooms, sliced Provides earthy flavor when sautéed.
  • 3 cloves garlic, minced For the creamy garlic sauce.
  • 1 cup heavy cream Makes the sauce rich and creamy.
  • 1/2 cup grated Parmesan cheese Adds flavor and helps to thicken the sauce.
  • to taste Salt and pepper For seasoning.
  • Fresh herbs for garnish (optional) Adds a fresh touch when serving.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Carefully cut your spaghetti squash in half lengthwise and scoop out the seeds.
  • Drizzle the insides with olive oil and season with salt and pepper.
  • Place the halves cut-side down on a baking sheet and roast for about 30-40 minutes, or until tender.

Sauté the Vegetables

  • While the squash is roasting, heat a large skillet over medium heat.
  • Add a drizzle of olive oil and sauté the sliced mushrooms for about 5-7 minutes or until they are golden brown.
  • Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant, then add the fresh spinach.
  • Cook until the spinach wilts, about 2 minutes.

Create the Sauce

  • Pour the cream into the skillet with the vegetables and bring it to a simmer.
  • Stir in the grated Parmesan cheese, mixing until melted.
  • Season with additional salt and pepper to taste.

Combine and Serve

  • Once the spaghetti squash is done, use a fork to scrape the insides, creating spaghetti-like strands.
  • Add the squash strands into the creamy vegetable mixture and toss until everything is well combined.
  • Serve warm, garnished with fresh herbs if desired.

Notes

For a lighter version, you can substitute half of the heavy cream with vegetable broth or milk. You can also add different herbs like thyme or basil for added flavor, or include other vegetables like bell peppers or zucchini.
