  • 1 pound shrimp (peeled and deveined) Fresh shrimp recommended
  • 1 pre-made pie crust pie crust (store-bought or homemade)
  • 1 cup heavy cream
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese Divided for mixing and topping
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley (chopped)

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a skillet over medium heat, add a splash of oil, then add the shrimp. Sauté until they’re pink and opaque, about 3-4 minutes. Remove from heat and set aside.
  • In the same skillet, add chopped onions and minced garlic. Sauté until translucent (about 2-3 minutes).
  • In a large mixing bowl, combine the sautéed shrimp, onion, garlic, heavy cream, sour cream, lemon juice, parsley, and half of the cheddar cheese. Season with salt and pepper to taste. Stir until well combined.

Assembly and Baking

  • Pour the shrimp mixture into the pie crust, then sprinkle the remaining cheddar cheese on top.
  • Place the pie in the preheated oven and bake for 30-35 minutes or until the cheese is bubbly and golden.
  • Remove the pie from the oven and let it cool for a few minutes before slicing and serving.

Notes

Serve with a refreshing side salad, garlic bread, or roasted asparagus. Pair with iced tea or a crisp white wine.
