Ingredients
  

For the salad

  • 2 large large cucumbers, sliced thin
  • 2 cups cherry tomatoes, halved

For the dressing

  • 1/2 cup Greek yogurt for creaminess
  • 1/4 cup mayonnaise adds depth of flavor
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon juice for a zesty touch

Preparation

  • Wash the cucumbers and tomatoes thoroughly. Slice the cucumbers thinly and halve the cherry tomatoes.
  • In a mixing bowl, combine Greek yogurt, mayonnaise, fresh dill, lemon juice, salt, and pepper. Stir the mixture until it's smooth and well combined.
  • In a large salad bowl, add the sliced cucumbers and halved tomatoes. Pour the creamy dressing over the vegetables.
  • Using a spatula or large spoon, gently toss the cucumbers and tomatoes in the dressing until they're evenly coated.
  • Let the salad chill in the refrigerator for about 15 minutes to allow the flavors to meld. Serve cold and enjoy!

Notes

For a lower-calorie option, use low-fat Greek yogurt instead of full-fat. Cut cucumbers shortly before serving to minimize moisture. Store leftovers in an airtight container in the refrigerator for up to two days.
