Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 can cream of chicken soup (10.5 oz)
  • 1 can diced tomatoes with green chilies (10 oz)
  • 1 cup chicken broth
  • 8 oz spaghetti Broken into halves
  • 1 cup cream cheese, cubed
  • 1 cup shredded cheddar cheese
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper

Instructions
 

Preparation

  • Place the boneless chicken breasts at the bottom of your crockpot.
  • Pour the cream of chicken soup and diced tomatoes over the chicken. Add the chicken broth, Italian seasoning, salt, and pepper. Gently mix to combine.

Cooking

  • Cover and cook on low for about 6-7 hours or high for 3-4 hours until the chicken is tender and fully cooked.
  • Once cooked, shred the chicken using two forks directly in the crockpot.
  • Stir in the cubed cream cheese until melted and combined.
  • Add the spaghetti broken into halves, and mix well.
  • Cover and cook on high for an additional 30 minutes until the spaghetti is tender.

Serving

  • Sprinkle with shredded cheddar cheese before serving. Enjoy your creamy delight!

Notes

Pair with a fresh garden salad or garlic bread for a complete meal. Can substitute chicken with turkey or plant-based protein. Store leftovers in an airtight container for up to 3-4 days in the refrigerator or freeze for up to 3 months.
