Main Ingredients

  • 1 pound boneless skinless chicken breast
  • 16 ounces gnocchi (fresh or frozen)
  • 4 cups chicken broth
  • 1 cup heavy cream or coconut cream for a non-dairy alternative
  • 2 cups spinach (fresh or frozen)
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Preparation

  • Start by chopping your vegetables. Dice the carrots, celery, and onion, and mince the garlic.

Layer the Ingredients

  • In the crockpot, add the diced chicken breast at the bottom. Layer the chopped vegetables on top.

Add Liquids

  • Pour in the chicken broth and add the Italian seasoning, salt, and pepper. Stir gently to mix the ingredients.

Cook

  • Cover the crockpot and set it on low for about 6–7 hours (or high for 3–4 hours), until the chicken is cooked through and tender.

Shred the Chicken

  • Once cooked, shred the chicken using two forks directly in the crockpot.

Add Cream and Gnocchi

  • Stir in the heavy cream and the gnocchi. Right before serving, add the spinach.

Finish Cooking

  • Allow it to cook for an additional 30 minutes on high until the gnocchi are cooked and fluffy.

Serve and Enjoy

  • Ladle the soup into bowls and enjoy the comforting flavors!

Notes

Use fresh ingredients to enhance flavor. Substitutions for chicken and cream can be made. Avoid overcooking the gnocchi to retain texture.
