  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 1 bell pepper, diced
  • 1 cup carrots, diced
  • 1 cup corn kernels (fresh or frozen)
  • 1 can (15 oz) diced tomatoes, undrained
  • 4 cups vegetable broth
  • 1 cup heavy cream or coconut milk
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish For serving

Preparation

  • In a large pot, heat olive oil over medium heat.
  • Add the diced onion and garlic, sautéing until the onion is translucent and fragrant, about 2-3 minutes.
  • Stir in the bell pepper and carrots, cooking for an additional 5 minutes until they start to soften.
  • Add in the corn, diced tomatoes (with juices), vegetable broth, cumin, and paprika. Stir well to combine all the flavors.
  • Bring the mixture to a gentle boil, then reduce the heat and let it simmer for about 15 minutes. The vegetables should be tender, and the flavors well combined.
  • Slowly pour in the heavy cream or coconut milk, stirring until fully incorporated. Season with salt and pepper to taste.
  • Ladle the soup into bowls and garnish with fresh cilantro or parsley. Enjoy!

Notes

Feel free to substitute any favorite vegetables you have on hand. The soup can be made ahead and actually tastes better the next day as the flavors meld together.
