  • 1 cup pineapple chunks Fresh or canned
  • 1/2 cup vegetable broth or water
  • 1 teaspoon sugar Optional, adjust to taste

Preparation

  • Rinse the jasmine rice under cold water until the water runs clear.
  • In a medium saucepan, combine the rinsed rice, coconut milk, vegetable broth (or water), and a pinch of salt.

Cooking

  • Bring the mixture to a gentle boil over medium heat. Once boiling, reduce the heat to low and cover the pan.
  • Let the rice simmer for about 15-20 minutes or until the liquid is absorbed and the rice is tender.
  • Once the rice is cooked, gently fluff with a fork. Add the pineapple chunks to the rice and stir to combine.
  • If using sugar, sprinkle it in now for added sweetness.
  • Transfer the creamy coconut pineapple rice to a serving bowl and garnish with fresh herbs if desired.

Notes

For best results, use high-quality coconut milk. Adjust the sweetness and experiment with toppings like chopped nuts or a squeeze of lime.
