Preparation

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine the flour and powdered sugar for the crust.
  • Gradually cut in the butter until the mixture resembles coarse crumbs.
  • Press the mixture into the bottom of an 8x8-inch baking pan to form a crust.

Baking the Crust

  • Bake the crust in the preheated oven for 15-20 minutes, or until lightly golden.

Making the Filling

  • In another bowl, whisk together the eggs and granulated sugar until well combined.
  • Stir in the lemon juice, flour, lemon zest, and baking powder.
  • Fold in the shredded coconut.

Combining and Final Baking

Cooling and Serving
