  • 2 cups egg noodles Cook according to package directions.
  • 1 cup carrots (sliced)
  • 1 cup celery (sliced)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

  • In a large pot, heat a drizzle of oil over medium heat. Add chopped onions, sliced carrots, and celery. Sauté for about 5 minutes until the veggies begin to soften.
  • Stir in minced garlic and dried thyme, cooking for an additional minute until fragrant.
  • Add the chicken broth and bring it to a gentle simmer.
  • Once simmering, add the egg noodles. Cook according to the package directions, usually around 6-8 minutes, until the noodles are tender.
  • Lower the heat and stir in the shredded chicken and heavy cream. Let everything heat through for about 2-3 minutes, seasoning with salt and pepper to your liking.
  • Garnish with fresh parsley before serving. Ladle into bowls and enjoy the deliciousness!

Notes
