  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 medium bell pepper, diced
  • 2 medium carrots, sliced
  • 4 cups chicken broth
  • 1 teaspoon Cajun seasoning
  • 1 cup heavy cream
  • Salt and pepper (to taste)
  • Fresh parsley for garnish
  • Juice of 1 lemon (optional)

Preparation

  • In a large pot, heat olive oil over medium-high heat. Add the chicken pieces and season with salt, pepper, and Cajun seasoning. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove and set aside.
  • In the same pot, add the onion, garlic, bell pepper, and carrots. Sauté for about 5 minutes until the vegetables are softened.
  • Return the chicken to the pot and pour in the chicken broth. Bring to a gentle boil and reduce the heat to low. Allow it to simmer for about 10 minutes, letting the flavors meld together.
  • Stir in the heavy cream and adjust the seasoning as needed, ensuring the soup has that creamy consistency and delicious flavor.
  • Spoon the soup into bowls, garnish with fresh parsley and a squeeze of lemon, if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months. Reheat gently on the stove over low heat.
