  • 4 cups fresh celery, chopped Use crisp and vibrant celery for best flavor.
  • 1 medium onion, diced
  • 2 cloves garlic, minced

  • 4 tablespoons unsalted butter
  • 4 cups vegetable broth
  • 1 cup heavy cream Can substitute with plant-based cream.
  • to taste Salt and pepper Adjust according to preference.

Preparation

  • In a large pot, melt the butter over medium heat. Add the diced onions and minced garlic, and sauté until softened, about 5 minutes.
  • Toss in the chopped celery and continue to sauté for another 5 minutes, allowing the flavors to blend and the celery to soften.
  • Add the vegetable broth to the pot, bringing everything to a boil. Once boiling, reduce the heat to a simmer and cook for 10-15 minutes or until the celery is tender.
  • Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend just half of the soup and return it to the pot.
  • Stir in the heavy cream and season with salt and pepper to taste. Allow the soup to heat through for a couple of minutes.
  • Spoon the soup into bowls, garnishing with your desired toppings, and enjoy!

Notes

For extra flavor, consider adding herbs like thyme or dill. Cream can be adjusted based on taste preferences. Store leftovers in an airtight container for up to 3 days.
