  • 1 cup Biscoff spread
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the Biscoff spread and granulated sugar. Mix with a spatula until well blended.
  • Crack the egg into the bowl and add the vanilla extract. Stir until fully incorporated.
  • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  • Use a cookie scoop or tablespoon to drop the dough onto a parchment-lined baking sheet, spacing them about two inches apart.
  • Place the baking sheet in the oven and bake for 10-12 minutes or until the edges are golden brown.
  • Once baked, remove the cookies and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store leftover cookies in an airtight container at room temperature for up to a week, or refrigerate for about two weeks. Reheat cookies in the microwave for 10-15 seconds or in the oven at 300°F (150°C) for about 5 minutes.
