Dry Ingredients

  • 1 cup rolled oats Use gluten-free oats if needed.
  • 1/2 cup dried cranberries, chopped
  • 1/2 cup unsalted pistachios, chopped

Wet Ingredients

  • 1/2 cup almond butter or nut butter of your choice
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Preparation

  • In a mixing bowl, combine the rolled oats, chopped dried cranberries, and chopped pistachios. Mix well.
  • In a separate bowl, combine the almond butter, honey (or maple syrup), vanilla extract, and salt. Stir until the mixture is smooth and well-blended.
  • Pour the wet mixture into the bowl with the dry ingredients. Stir to combine, ensuring that all the oats and fruits are coated evenly.
  • Using your hands, take small portions of the mixture and roll them into bite-sized balls, aiming for about one inch in diameter.
  • Place the energy bites on a parchment-lined tray and refrigerate for about 30 minutes to firm up.
  • Once set, enjoy immediately, or transfer them to an airtight container.

Notes

Store in an airtight container in the refrigerator for up to a week. For longer storage, freeze in a freezer-safe container for up to three months.
