Cheese Mixture

  • 8 oz cream cheese (softened) Make sure it's at room temperature for easy mixing.
  • 1 cup shredded cheddar cheese
  • 1 cup fresh cranberries (chopped) Use bright, plump cranberries for the best flavor.
  • 1 cup unsalted pistachios (chopped) Chop finely for coating.
  • 2 tablespoons fresh parsley (finely chopped) For garnish.
  • 1 tablespoon honey (optional) For added sweetness.
  • Salt and pepper to taste

Preparation

  • In a mixing bowl, combine the softened cream cheese and shredded cheddar cheese. Use a hand mixer or spatula to blend until creamy and well combined.
  • Fold in the chopped cranberries, honey (if using), salt, and pepper. Mix until everything is evenly distributed.
  • Lay a piece of plastic wrap on your working surface. Spoon the cheese mixture onto the plastic, shaping it into a log. Roll the plastic wrap around the mixture and twist the ends to secure it tightly. Chill in the refrigerator for at least 30 minutes.
  • Once chilled, unwrap the cheese log and roll it in the chopped pistachios until fully coated. Gently press them in to help them adhere.
  • Place the cheese log on a serving platter and garnish with chopped parsley for a pop of color. Serve with crackers, veggie sticks, or your dipper of choice.

Notes

For best results, use fresh ingredients and consider adding spices like garlic powder or onion powder for variation. Store leftovers tightly wrapped in the fridge and consume within 3-5 days.
