Cheese Mixture

  • 8 oz cream cheese, softened Ensure cream cheese is at room temperature
  • 1/2 cup shredded sharp cheddar cheese
  • 1/2 cup dried cranberries, chopped
  • 1/4 cup orange juice Freshly squeezed is best
  • 1 teaspoon orange zest
  • Salt and pepper to taste salt and pepper

Coating and Garnish

  • 1/4 cup chopped pecans Or your favorite nuts
  • fresh parsley Optional, for garnish

Preparation

  • In a medium-sized mixing bowl, combine the softened cream cheese and shredded cheddar.
  • Slowly incorporate the chopped dried cranberries, orange juice, and orange zest. Mix until well combined, seasoning with salt and pepper.
  • Shape the mixture into a ball using your hands.
  • Roll the cheese ball in the chopped pecans until fully coated.
  • Wrap in plastic wrap and refrigerate for at least one hour.
  • Serve with crackers, sliced veggies, or fruit, and garnish with fresh parsley if desired.

Notes

For best flavor, chill overnight. Store tightly wrapped in the refrigerator for up to a week or freeze for a month.
