Ingredients
  

Dry Ingredients

  • 2 cups rolled oats
  • 1 cup chopped nuts (almonds, walnuts, or your choice) Feel free to mix and match nuts.
  • 1/2 cup dried cranberries Can be substituted with raisins or chopped dates.
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup honey or maple syrup
  • 1/4 cup almond butter or peanut butter
  • 1/2 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal later.
  • In a large mixing bowl, combine rolled oats, chopped nuts, dried cranberries, and salt. Mix well.
  • In a smaller bowl, stir together honey (or maple syrup), almond butter (or peanut butter), and vanilla extract until smooth and well combined.
  • Pour the wet mixture over the dry ingredients and mix thoroughly until everything is evenly coated.
  • Transfer the mixture to the prepared baking dish. Press down firmly to create an even layer.

Baking

  • Place the pan in the preheated oven and bake for 15-20 minutes or until the edges start to turn golden brown.

Cooling and Cutting

  • Remove from the oven and let it cool in the pan for about 10 minutes.
  • Use the parchment overhang to lift the granola out and onto a cutting board. Cut into bars or squares.

Notes

Store in an airtight container at room temperature for up to a week or freeze for up to three months. Can be served with yogurt or fresh fruit for a tasty breakfast.
