  • 4 pieces boneless, skinless chicken breasts
  • 4 oz brie cheese, sliced
  • 1/2 cup cranberry sauce (store-bought or homemade)
  • 2 tbsp olive oil Plus extra for searing
  • 1 tsp garlic powder
  • to taste Salt and pepper
  • for garnish Fresh thyme

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Place the chicken breasts on a cutting board. Use a sharp knife to create a pocket in the side of each breast, being careful not to cut all the way through.
  • Rub the chicken breasts with olive oil, and sprinkle with garlic powder, salt, and pepper.

Stuffing and Cooking

  • Take a slice of brie cheese and a spoonful of cranberry sauce and place them into each chicken pocket, packing it tightly.
  • In a large oven-proof skillet, heat a bit of olive oil on medium-high heat. Once hot, add the stuffed chicken breasts and sear for about 2–3 minutes on each side or until golden brown.
  • Transfer the skillet to the preheated oven and bake for 20–25 minutes, or until the chicken is cooked through and juicy.
  • Remove the chicken from the oven and let it rest for a few minutes. Garnish with fresh thyme and serve warm.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave or in a skillet over low heat. To freeze, wrap portions tightly and they'll keep for up to 2 months.
