  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup unsalted butter, softened Ensure butter is softened, not melted.
  • 1 cup granulated sugar Can be substituted with honey for a healthier twist.
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Mix-ins

  • 1 cup dried cranberries
  • 1/2 cup white chocolate chips

Preparation

  • Preheat your oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper.
  • In a bowl, whisk together flour, baking powder, baking soda, and salt. Set this mixture aside.
  • In another bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy.
  • Add the eggs and vanilla extract, mixing until fully combined.
  • Gradually add the dry ingredients into the wet mixture, stirring gently until just combined.
  • Fold in the dried cranberries and white chocolate chips.
  • Pour the batter into the prepared baking pan, smoothing the top with a spatula.

Baking & Cooling

  • Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the bars to cool completely in the pan before frosting.

Notes

For best results, do not overmix the batter. Allow the bars to cool completely before cutting to maintain their shape. Store in an airtight container for up to a week. These bars can be frozen; wrap them individually in plastic wrap and place in a freezer-safe bag.
