  • 1 cup shredded carrots
  • 1 cup chopped apples (such as Granny Smith or Honeycrisp) Choose sweet and juicy varieties.
  • 1 cup dried cranberries

For the Dressing

  • ½ cup mayonnaise (or Greek yogurt for a lighter option)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey (optional) Adjust to taste for sweetness.
  • Salt and pepper to taste

Preparation

  • In a large bowl, combine the shredded cabbage and carrots.
  • Toss in the chopped apples and dried cranberries.
  • In a smaller bowl, whisk together the mayonnaise (or Greek yogurt), apple cider vinegar, and honey (if using). Season with salt and pepper to taste.
  • Pour the dressing over the cabbage mixture and gently toss everything together until well-coated.
  • Let the coleslaw sit in the refrigerator for about 15-30 minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Keep the dressing separate until ready to serve to maintain crunch.
