  • 1 cup wild rice blend
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 3 stalks celery, sliced
  • 6 cups low sodium chicken broth
  • 1 cup heavy cream or dairy-free alternative
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Preparation

  • Place the boneless, skinless chicken breasts in the slow cooker.
  • Layer in the wild rice, diced onion, minced garlic, carrots, and celery on top of the chicken.
  • Add the chicken broth to the slow cooker, ensuring the ingredients are fully submerged.
  • Sprinkle in the dried thyme, rosemary, salt, and pepper.
  • Cover the slow cooker and set on low for 6-8 hours or high for 3-4 hours, until the chicken is tender and the rice is cooked through.
  • Near the end of cooking, shred the chicken using two forks and stir back into the soup.
  • Pour in the heavy cream (or dairy-free alternative), mix well, and allow it to heat for an additional 30 minutes.
  • Ladle the soup into bowls, garnish with fresh parsley, and serve.

Notes

For a thicker soup, let it cook uncovered for the last hour or add cornstarch mixed with cold water for thickening. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days.
