  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth or water
  • 1 medium butternut squash, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika (optional)
  • to taste fresh herbs for garnish (like parsley or cilantro)

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Peel and cube the butternut squash into bite-sized pieces. Toss them with olive oil, salt, pepper, garlic powder, onion powder, and smoked paprika (if using).

Cooking

  • Spread the seasoned squash onto a baking sheet and roast it for about 25-30 minutes, flipping halfway through.
  • While the squash is roasting, rinse the quinoa under cold water. In a saucepan, combine the rinsed quinoa and vegetable broth or water. Bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes until all liquid is absorbed.

Serving

  • Once the squash is done, combine it with the cooked quinoa and gently stir. Garnish with fresh herbs before serving.

Notes

Substitutions for butternut squash include sweet potatoes or other seasonal vegetables. Store leftovers in an airtight container for up to 5 days, or freeze for up to 3 months.
