  • 1/4 cup olive oil Use fresh for the best flavors.
  • 2 tablespoons lemon juice Adjust to taste for more zest.
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh dill, chopped Can substitute dried dill (1/3 amount) if fresh is unavailable.

Preparation

  • In a mixing bowl or a jar with a lid, add the olive oil, lemon juice, Dijon mustard, and chopped dill.
  • Sprinkle salt and pepper to taste.
  • Whisk together using a fork or shake the jar until everything is well combined.
  • Taste it and adjust if necessary: add more lemon juice for zestiness or more olive oil for creaminess.
  • Drizzle generously over salads, grilled vegetables, or use it as a marinade.

Notes

Prepare the vinaigrette at least 15 minutes before serving to allow flavors to meld. Store leftovers in the refrigerator for about a week. Shake or stir before using.
