For the Soup Base

  • 1 pound ground beef or halal-friendly sausage
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 28 ounces can crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 8 ounces lasagna noodles, broken into pieces

Cheeses

  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Seasonings

  • 2 teaspoons dried basil
  • 2 teaspoons dried oregano
  • Salt and pepper to taste

Garnish

  • Fresh basil for garnish

Preparation

  • In a large pot over medium heat, add the ground beef or sausage and diced onion. Cook until the meat is browned and the onions are translucent, about 5-7 minutes. Be sure to drain any excess fat.
  • Stir in the minced garlic and cook for an additional minute, allowing the garlic to become fragrant.
  • Pour in the crushed tomatoes and broth, stirring to combine. Allow it to simmer for about 5 minutes to let the flavors meld together.
  • Break the lasagna noodles into smaller pieces and add them to the pot. Cook for about 10 minutes, or until the noodles are tender.
  • Lower the heat and stir in the ricotta, mozzarella, and Parmesan cheeses. Allow them to melt into the soup, creating a creamy texture. Season with dried basil, oregano, salt, and pepper to taste.
  • Once the cheese is melted and everything is well combined, ladle into bowls and garnish with fresh basil for an added touch of flavor.

Notes

If you're not a fan of beef, try using ground turkey or a plant-based meat alternative. Keep an eye on the noodles, as overcooked pasta can ruin the texture of the soup. Aim for al dente for the best bite. If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months.
