  • 3 cups dashi broth (ensure it’s Halal-friendly)
  • 1 cup water
  • 1 tablespoon soy sauce
  • 1 teaspoon mirin
  • 1 green onion, sliced adds freshness
  • 1 cup mushrooms, sliced (shiitake or button mushrooms) for flavor
  • 1 carrot, julienned for texture
  • Salt to taste adjust according to preference

Preparation

  • In a medium saucepan, combine the dashi broth and water. Bring to a simmer over medium heat.
  • Once simmering, stir in the soy sauce and mirin.
  • Toss in the sliced mushrooms and julienned carrots. Allow the vegetables to cook until tender, about 5 minutes.
  • Stir in the sliced green onions just before serving.
  • Adjust the salt to your liking.

Notes

For vegan/vegetarian, substitute dashi with vegetable broth. Feel free to add seasonal vegetables like spinach or bok choy. Store leftovers in an airtight container for up to 3 days, or freeze for about a month.
