Main ingredients

  • 1 pound spicy or mild Italian sausage (without pork) Use chicken or turkey sausage for a lighter version.
  • 4 medium-sized potatoes, peeled and diced Note: Don't overcook, they should be fork-tender.
  • 1 large onion, diced
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken or vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • to taste salt and pepper
  • as needed fresh parsley for garnish

Preparation

  • In a large pot, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a wooden spoon as it cooks for about 5-7 minutes.
  • Add the diced onion, carrots, garlic, and celery to the pot. Sauté until the vegetables are tender, around 5 minutes.
  • Pour in the chicken or vegetable broth, followed by the diced potatoes. Stir in the dried oregano and thyme, and season with salt and pepper.
  • Bring the soup to a boil, then reduce the heat to low. Allow it to simmer uncovered for about 30 minutes, or until the potatoes are fork-tender.
  • Taste and adjust the seasoning if necessary. Ladle the soup into bowls, garnish with fresh parsley, and enjoy!

Notes

Leftover soup can be stored in an airtight container in the refrigerator for up to four days. It freezes well for up to three months.
