  • 1 pound ground beef (or Halal sausage) Substitute with turkey or vegetarian options if desired.
  • 1 medium onion, diced
  • 1 bell pepper, diced (any color you prefer!)
  • 2 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon paprika
  • 1 cup mixed vegetables (like peas or corn), thawed if frozen

Preparation

  • In a pot of boiling water, cook 1 cup of long-grain rice according to package instructions, usually about 15-20 minutes.
  • In a large skillet, heat a tablespoon of oil over medium heat, then add the diced onion and bell pepper. Sauté for 3-5 minutes until tender and fragrant.
  • Push the veggies to one side of the skillet and brown the ground beef for about 5-7 minutes, ensuring even cooking.
  • Stir in the minced garlic and sauté for an additional minute.
  • Mix in the tomato sauce, salt, pepper, and paprika, and let it simmer for about 5 minutes.
  • Stir in the cooked rice and thawed mixed vegetables, mixing gently to combine.
  • Serve hot, garnished with herbs or cheese as desired.

Notes

For a flavor boost, cook rice in vegetable broth. Leftovers can be stored in an airtight container for 3-4 days and frozen for up to 3 months.
