Preparation

  • Wash the cauliflower head thoroughly, cut it into quarters, and remove the core. Grate the cauliflower until it resembles rice and set aside.

Cooking

  • In a non-stick skillet, melt the butter over medium heat. Add the grated cauliflower rice and sauté for about 5-7 minutes, stirring occasionally, until tender but not mushy.
  • Lower the heat and add the milk, stirring until well combined to achieve a creamy texture.
  • Gradually stir in the shredded cheese until fully melted and combined. Season with salt and pepper to taste.
  • Transfer to a serving bowl and garnish with optional green onions or chopped parsley.

Notes

For cheese alternatives, consider mozzarella or gouda for a different flavor profile. Watch the cooking time to avoid mushy cauliflower. Store in an airtight container for up to 3 days or freeze for up to a month.
