  • In a large pot, heat a splash of oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables are tender and fragrant.
  • Stir in the minced garlic and dried thyme, cooking for an additional minute.
  • Add the chicken broth, bringing everything to a gentle boil.
  • Stir in the shredded cooked chicken and cooked rice, letting it simmer for 5-10 minutes to combine the flavors beautifully.
  • Lower the heat and add the heavy cream. Season with salt and pepper to taste. Allow it to warm through for another 5 minutes.
  • Ladle your comforting soup into bowls and sprinkle fresh parsley on top before serving.

Notes

Make it Your Own: Feel free to substitute chicken with turkey or any halal protein. You can also add your favorite vegetables like peas or corn. Ensure not to boil the soup aggressively once you add the cream to prevent curdling. If using pre-cooked rice, add it toward the end to avoid mushiness. Store in an airtight container for up to 3-4 days or freeze for 2-3 months.
